Quick Fix Christmas Miracle From Granola: The Jude Law-Catching Orange Bread

We guarantee that when you put this orange bread in the oven, even Jude Law will leap out of the TV, leaving behind that quintessential English romantic village and Cameron Diaz. You're creating such a Christmas ambiance! The scent of orange and cinnamon fills your home, accompanied by soft, pleasant Christmas music (not necessarily Mariah Carey, though tastes vary...). Jude is already by your side—could you ask for more? Oh, and meanwhile, this is what you see in the oven:

To experience all of this, you'll need the following:
  • 300g Brewer's Granola (with hazelnuts/sour cherries), finely ground

  • 30g (flaxseed) flour *only if the dough seems too runny

  • 100g sugar

  • 3 oranges

  • 180g plant-based fat (sunflower oil/canola oil/coconut oil)

  • 1 egg

  • 1/2 tsp baking powder

  • Vanilla (ground/extract; optional spices: cinnamon, cloves...)

  • Salt

This is how you do it:
  1. Mix the dry ingredients: ground granola, baking powder, vanilla, and a pinch of salt.

  2. Grate the orange zest into the sugar and rub them together well to allow the oils to infuse the sugar.

  3. Mix the sugar with the egg.

  4. Add the oil and the squeezed juice of the oranges.

  5. Evenly combine the dry and wet mixtures.

  6. If the mixture seems too runny, add ~30g of flour (we've tried it with flaxseed and wheat flour).

  7. Bake in a preheated oven at 175°C for 45-50 minutes; cover the top with aluminum foil halfway through to prevent burning.

  8. Let it cool in the mold.
