Sweet & Easy Recipe With Granola, The Ultimate Apple Cookie

If you are anything like us, there is a little cookie monster inside you and cookies mean a lot to you... And these fresh, soft apple cookies, perfectly complemented by the crispy hazelnut and the rich taste of dark chocolate are love at first bite. Try our super easy and quick recipe, because it's not only delicious, but also a great source of dietary fiber and protein!

INGREDIENTS for 12-14 cookies:
  • 200g Brewer's Granola, finely ground (choose your favorite flavor)

  • 60g melted butter

  • 60g brown sugar (or other sweetener)

  • 2 whole eggs

  • 1 teaspoon baking powder

  • 2 medium-sized apples, grated, with the juice squeezed out


It is not necessary to peel the apples, as you know from our Upcycling 101, it's very important not to waste food. While baking, you can sip the delicous juice of the apples, or if you peel them, you can make a heart-warming Spiced Tea from it 😊 One of the many advantages of upcycling is that it encourages creative and multifunctional thinking.

THIS IS HOW YOU DO IT:
  1. Finely grind the Brewer's Granola. We selected the hazelnut/chocolate pieces and added them whole to the mixture.

  2. Thoroughly mix the eggs with the sugar.

  3. Add the remaining ingredients and mix the batter thoroughly.

  4. With wet hands or a spoon, shape the sticky batter into smaller balls. Place them on a baking sheet lined with parchment paper and flatten them slightly.

  5. Bake in a preheated oven at 175°C for 25 minutes. We recommend the "toothpick test" as baking time may vary depending on size. 🙂
